Ingredients
  • 2 pieces cod fillet About 250 grams
  • 1/2 cup heavy cream / double cream
  • 5 tbsp mayonnaise
  • 1 tbsp dijon mustard
  • 4 tbsp dill chopped
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tsp lemon juice

Instructions
  1. Preheat the oven to 220 C / 425 F.
  2. Mix cream, mayonnaise, Dijon mustard, lemon juice and chopped dill into a bowl and stir. Add salt and pepper to taste.
  3. Put the fish in an oven safe form and pour the sauce over. Put the form in the middle oven for about 20 minutes. Serve with boiled potatoes, rice also works.

Ingredients
  • 4 tbs mustard
  • 2 tbs course grain mustard
  • 2 tbs dijon mustard
  • 2 tbs honey
  • 0.3 cup white wine vinegar
  • 1 tbs sugar
  • 1 tsp salt
  • 1 pinch ground white pepper
  • 0.4 cup rapseed oil
  • 3 tbs fresh chopped dill

Instructions
  1. Mix all ingredients into a sauce except oil and dill.
  2. Add the oil slowly while blending the mustard sauce. Then add the dill.
  3. Lastly add the herring cut into bitesize pieces in to a bowl (then cover it) or a jar with a lid and put in the refrigerator for at least 24 hours to soak in all the flavours before eating it.

Ingredients
  • 0.4 cup grated cheddar cheese
  • 1 small red onion chopped, small pieces
  • ½ orange zest
  • 0.5 grams saffron 1 package
  • 1 cup creme fraiche
  • 2 tbs fresh chopped dill

  1. Mix grated cheddar cheese with finely chopped onion, orange zest, saffron and cream fraiche. Blend in the dill and taste with pepper.
  2. Lastly add the herring cut into bite size pieces in to a bowl (then cover it) or a jar with and put in the refrigerator for at least 24 hours to soak in all the flavors before eating it.
